Can anyone tell me the difference between the heater dials I've always had (red fading to blue, no numbers) to the one's i've seen a few times, like what Andrew has in his (red fading to blue, numbers around the edge)??

Some came with the dial for temerature controlled heating. The dome shaped button above the dial is where the sensor goes. even if you have numbers, this doesnt mean you have the temp regulator.
