I can't find any E30 with 16x9" wheels with correct tyres.

How much arch molesting would be required over the streched tyres? I assume more to stop the tyre wall rubbing on the arch? I swear I've seen one or two, but can't find any atm.

Anyone?

I think suchy is running 9j with something like 225+ tyres

9j you will need 235 at least not to have a stretch.
