Best thing to do is go and look at the work of the upholsterers.
I had a problem when looking for an upholsterer this side of the water. A lot of people will say "O so & so is good, they did Joe Bloggs seats" and when you seen the work yourself it wasn't up to scratch. Maybe the guy knocked a few quid of it and the customer was chuffed but personally id rather pay a few more quid for a excellent job.
No matter what quote you get you will be well into 4 figures, better to pay £2000 for a good job than £1500 for average job imo but best of luck!
