if i was you, have a look around online and in some magazines at the top prices your car is going for and try to find one thats priced close to what you want your car valued at, send these prices or links onto the value man and see how it goes and see if you can persuade someone to sign the form.

My car was done over a year and a half ago, and my insurance company over the phone sounded like it was write off time, i told them no way and done the above, and had my car valued for the same price i purchased it for four years previous, so they decided to repair and restore my car. I know its different circumstances but you never know.

No other proof required!

Take it somewhere that sells these cars for top money. I took mine to munich legends and they slapped a 12k valuation on it for me with a signed letter so i can prove it whenever i need to.

I had a claim processed a couple of weeks ago for my car which was written off - the insurance companies claims department asked me over the phone what I thought the car was worth and then made me an offer based on this value (after looking at the stacks of history I sent them on the car). In my opinion, they seem to guess the value as no accurate price guides exist for e30's anymore due to their age.
