Hey zone

I’m thinking about buying this to replace my throttle body gasket. Can anyone advise if this will work? I’d trace around the old one

Nothing wrong with gasket paper if the correct gasket isn't available, but 1mm is a bit thick for this application. Been using it occasionally for 50 years.
Make sure that you don't leave any protruding into the airflow.

What are the dimensions for a diff back plate? Would an A4 sheet be big enough? I need to do and oil change and would be wise to change the gasket too.

Without measuring, I would think A4 is big enough, but it'll be tight. It should be a thin gasket paper. Note that BMW no longer use gaskets on the diff. covers after the E46, using a liquid gasket instead, which you may like to consider.
Why do you want to change the gasket for an oil change?

Wow, that is tight, but happy to give it a go and I have some gasket sealer on a shelf just in case it all goes to pot!!

Reason to change the gasket is because, I actually purchased the diff a year or so ago and it arrived with the oil removed and the seller had taken the back plate off for an inspection before sale. So I think before installing I would change the gasket and fill with new oil.
