Will a coupe headlining fit a saloon? Or are they different at the c posts?

A two door saloon headliner will fit a more door saloon,if that's what you mean?

Just did a check on bmw fans website and the part numbers look like they match so it should be ok?

Think Malc means a sports headlining trim, the black leather bit where the visors go. That will fit, but an actual vinyl headlining or roof covering will be different.

If i look on bmwfans.info for headlining part numbers for a 325i saloon and 325i coupe of the same year and month, there is some variation in part numbers, but some are the same, so im guessing therefore that coupe and saloon headlining are interchangeable?

No such thing as an E30 coupe, just 2dr or 4dr saloon. A 2dr saloon headlining will fit a 4dr saloon.
