I've got a brand new pair of 205/55/15 Continental Premium Contacts sitting in a dry lock up.

They've been sat on their side on wheels and magically have not lost any air. They are not breaking part if thats what you mean - still smooth and squiggly - no micro crack.
Was going to use them on the BSS whilst the Alpinas are being refurb'ed but could sell to get rid - no space.

"brand new" and "5 years old" is rather contradictory.
If it's any help, tyres 6 years or older will fail a German TUV check, whether there's visible signs of perishing or not. You might as well serve them on to some unsuspecting punter on eBay.

I checked them over and they look and feel as normal. They may actually be nearer 6-7 years old. Anything on the sidewall to tell me year of manufacture?

They will be fine for normal road use, I served some rusty steels with tyres not long ago that had been off the car for the last 6 years, carefully stored outside under a hedge

There will be a DOT code on the sidewall, stating DOT then 4 numbers eg 2614 would mean the 26th week of 2014. Wouldn't worry about it, Just accept the rubber is harder than when new and grip will be lower, especially in the wet.

As I understand it, what damages the rubber over time is exposure to UV light and sitting with weight on, IE on the car.
Caravaners who store them for a prolonged period of time often put the caravan on its legs to take the weight off and also cover the wheels to protect from UV light.
Incidently I used tyre's from a Merc that had sat in a field for 12 years without moving, they never popped
