Engine will run grand without it but for heavy warm driving conditions it does help the engine in the long run keeps the oil at from overheating and not doing its job, i had a sport for 10 months with no cooler and no problems from it at all,

Oil technology has come a long way since BMW decided that the 2.5 E30 needed an oil cooler. Just not needed with modern oil.
Oil has to be very hot before it even flows through the cooler.

there's no real need for the oil cooler, IIRC the operating temp for one is around 90° or something ?

a 325i really needs a good thrashing to even get close to that temp,

No, it would have been best to remove the cooler take off/thermostat head, and fit the simple double ended coupler as found on the 2 litre. It's hardly an expensive part, even new from BMW.
