10.5 on the back will be a major problem and undoubtedly very council
Why would you want to ruin your car ?

195 section tyres on a 8.5J rim and 205 on a 10.5J? That's some serious Vdubz action going on there...
P.S. Not sure if you were being sarcastic in your post

I have the original wheels but wanted a set for show use. The set in question are a set of Ac Schnizter Type 1's which are quite rare in that spec. I know the arch gap is big on the M3 but un sure if I'll have to stretch the arches

No need to fit incorrect wheels, I can sell you a set of E30 M3 correct 17" staggered Schnitzer Type 1s . Correct size wheels and tyres (215/45 front, 235/40 rear) . your car will drive and look right, not like some sorry scene turd that is en route to a Stancescum gig

The moment you flatten/roll/pull the arch lips on an E30 M3, you ruin it and wipe thousands from its value. Not advisable on a nice example, obviously.
