re they sticking out of the head or have they sheared inside?

I'm currently running with 2 bolts sheared inside the head because i cant be bother to strip the head off the engine.

If they are sticking out fo the head, get two nuts onto it, lock together by un-doing the first nut and tightening the second against it. then use them both to release the stud

With great difficulty, is the short answer! If the gasket isn't blowing, I strongly suggest you leave well alone.
If there's any stud at all projecting from the head, a thick washer can be placed over it and welded to the stud. The heat and thermal shock is usually enough to free it.
If the stud is flush or below the head surface, then it needs to be drilled out and removed with a stud extractor. This is extremely difficult to do with the engine in situ, and ideally the head should be removed, and clamped in position on a large pillar drill to do the job accurately.
If you have to remove the manifold completely, take the greatest care not to break any more. Soak the nuts with WD40 for days before you try to remove them, and cut them off is necessary.
