Pull the connector off the oil pressure switch as carefully as you can, without disturbing the wire any more than possible. Does this make the light go off?
The oil pressure switch wire runs around the front of the engine where the insulation gets brittle and falls off, or gets damaged by the water pump pulley, and if it shorts to earth the oil light will come on.
Oil pressure switches can fail quite readily as well.

Time for a fresh switch then. If that doesn't cure it, time for a fresh engine.

You'd better hope a fresh switch cures it then! Any engine that doesn't produce enough oil pressure to make a good switch turn out the pressure light isn't going to last long!!

surely it wouldn be the pump if it wasnt the switch? No need to replace the whole engine?!

There must be a reason its not getting pressure...
