What's meant to be here, where I've got this lump of tape?

Like it says...
Taken from the left side of the engine bay, with the AFM & AFM-TB hose removed. It's in the area underneath the throttle body... is this where I'm meant to have the C191 multiplug?

Actually the C101 plug, but yes, you are right. An interesting use of insulation tape!
Is there a cable exiting the taped area underneath? From the pic it has that Vietnam field-hospital amputee look...

Yeah, thats where the loom multiplug should be!!
Has someone taken the plug out and taped all the wires together??

Hi mate - i take it you are the same TomM off the SXOC? Looks like you've found the multiplug i was on about
Im sure thats gonna be the cause of some of your running probs!

It's actually the C191 (well it used to be). The C101 connector is up on the bulkhead near the fusebox.

Yes, that's me
It's probably not helping! I don't know if this is all that's going on, though. It's still running rough & rich, and still has a massive flat spot at the bottom of the rev range.
I've got a new blue temp sensor coming tomorrow, and I'm wondering about the intake manifold gasket.
I take it that rewiring that ex-plug is going to be a massive ballache? Any tips on... er... which wires need connecting to each other?

Go to a scrappy and cut both ends off a dead car, then just connect up the corresponding coloured wires

Joint looks a bit rough on the outside, but it 'might' be done properly inside.
Take off the outside tape and check that the individual wires are soldered and insulated properly.
Self amalgamating tape will make a waterproof outer cover for the joint.

Discovered my 325iSE has had this 'mod' also...perhaps it's quite a common way of dealing with corroded/troublesome connectors? Anyway, the car runs pretty well so out of sight, out of mind and all that.

I take it that there isn't a wiring diagram available, complete with wire colour codes, then?

Wiring diagrams are available, but I can't see why you want one.
AFAIK, there's no wiring colour change across the connector. Just match the colours in and out.
Red/white is common 12V+ to injectors
Brown/yellow is inject signal for one bank
Brown/white for the other bank
Brown/red is signal for the blue temp sensor
Brown/orange is earth for the blue sensor, and
Brown/purple is signal for the brown temp sensor.

Is it possible to purchase new connectors from BMW or wherever, or do you have to get lucky at a breakers? (Mine doesn't have any connectors here!

This is BMW. All connectors are available!
Don't really see the point of replacing this connector though. Can't think of any real reason why it would need to be unplugged, and properly done hard wiring will always be more reliable than a plug and socket.

Righty...
I've explored the connection where the multiplug used to be. I'm going to leave it alone for the time being, as it looks decently done, and re-doing all the connections (including soldering them) would be a nightmare as there's not much play in the wires and it's difficult to get to:
I also found this (sorry for the poor photo):

An oily residue coming from the throttle body, into the AFM-TB hose.
Any ideas what it is, and why it might be there?

that will coming from the engine, via the rocker cover vent pipe.

It could just be mayonnaise due to the cold/damp weather - unless you thoroughly warm the engine, it never gets evaporated off, so builds up (it's created by the crankcase breathing, which is designed to force oil vapours back into the inlet to be burnt off). My 325i recently had the same malady - I cleaned it all out (TB also) with carb cleaner.
