Hi, When I owned a toyota gti I fitted bigger brakes from fensport and they told me to remove the back plate from behind the disc to aid cooling. would his be ok to do on an e30 ?

Yes the thin metal cover behind the disc. So it should be ok to remove.

on the front i doubt removing it would cause any prob, but it prob is designed to catch extra air and pull it in towards the brakes as well as keepin dust in and water out..
