Auto to Manual Conversion - Mechanic Requested

Hi - I am looking to get an E30, I have been looking for a while (5 - 6 months) and am struggling to get one in my price range which is a decent car to use for an every-day drive. I want a manual but many that do come up are automatics. A Conversion is far beyond my skill set so I was wondering ifthere are any recommended specialists that would be able to offer a drive in / drive out conversion service (including sourcing the parts / gear box).
The Autos are generally in better condition and a lower mileage (on average) so if the conversion isn't too expensive, I could potentially get everything I am looking for a bit quicker
I haven't selected a vehicle yet, but could be an M40 318i or 320i. I don't think my budget would stretch to a 325 but I am a glass half full guy.
So, if there is a specialist garage, what would be a ball-park type of figure for the above - before I rule the idea out as crazy !
