poor running e30 325

hi guys iv recently put my e30 back on the road for summer, but last year I had to do the head gasket. I also renewed the rad the thermostat head bolts, dizy cap rotor arm. iv recently fitted full stainless exhaust and changed the plugs, but while out for a drive I was getting a splutter at 2000 revs and it felt a bit lumpy. then when I was in traffic the temp creaped up 3/4 on the gauge . and I noticed the rad pipes were a little hard, so went home let her cool down and I noticed the coolant was black looking so I put a flush through it . still the same so then got the header checked for exhaust fumes. and it was all clear! theres no oil and water mixing and the heaters work a treat!! realy confused and would greatly appreciate any feedback

Double check that you've got all your hoses the right way round, especially the ones going to the heater matrix.
When you changed the head gasket did you have the head checked for cracks? 325i heads are notorious for cracking if overheated.

yeah checked the hoses the one from the back of the head is at the bottom. is that rite?
I had the head skimmed and pressure tested before fitting even tho I was assured the head was good. I did it for my own piece of mind

could the heater matrix cause the rad pipes to go hard? was thinking of bypassing this to eliminate the matter. I don't have any wet carpet and the heaters work a treat. also going to change the temp sensor(the blue one on the thermostat)

I would check out the viscous fan coupling next,I think....

how do I check that? does it not turn the fan as quick when not working right?
