Engine stops reving around 5500rpm when throttle floored

Hi All,
Wondering if you can give me some idea's around what I should be looking at with a problem I have with my e30 325i. The engine has been stroked out to 2.8l using a M52 crank. It has a branch manifold, Dbilas ITB inlet manfold, Schrik 272/284 cam, E36 M3 3l injectors and a Miller MAF. My problem is that if you floor the accelator it will stop reving quite harshly at anywhere between 5000 and 6000 rpm, but if you don't use full throttle, ie part or mid throttle it revs all the way out to the 7000rpm redline.
I am thinking its got something to do with fuel delivery, in that the engine just can't get enough and have heard that is could be the issue, has anyone got some knowledge on this sort of issue???
