What on earth makes you think that the dash may need to be removed for an engine conversion?
Just a straight swap - no problems whatsoever.
TBH, the more of the 325 you can transplant, the better. Gearbox, diff, prop, suspension and brakes are all well worth fitting.

Engine loom won't connect straight up because the engine loom plug/socket (on the bulkhead, beside the fusebox) is different.
Either the plug on the engine loom needs to swapped for the early one off the old loom, or the socket on the bulkhead needs to be changed for the newer type.
You already have the plug to swap, but neatest is to change the socket for one off a facelift scrapper. All the wiring can be spliced inside the fusebox.
