I am currently in the process of designing a custom dash, and I do not have access to the car as of yet. Does anyone know if the heater controls are controlled by potentiometers and electronic components or if they are controlled by any other mechanical means like wire under tension, similar to cycle brake wire?

Hot/cold knob is a rheostat.
airduct adjustments are mechanical wires.
Fan switch is a switch in series with a resistor matrix.

I think the hot/cold has a cable as well

No reason why not, you just need to use longer cables.

Im sure you could move it as long as you extend the cables.
