Is it possible to fit a standard e30 dash or a e36, e46, m3 dash in to a non bmw car.

Assuming you mean the instrument cluster, if you provide it with the correct electrical signals, then it won't care what car it's in.

Yes. I've seen a VW Golf Mk1 fitted with a BMW E30 dashboard, in an issue of Max Power, IIRC.

You could probably fit an E30 gauge to most 80s European vehicles, since the level of technology is comparable.

You can't fit an E30 gauge to most later vehicles because the information from the sensors to the instruments is delievered in a different way. E30 gauges use a wire (or two, or three) to each sender, but newer cars use software signals on a single cable, called CANBUS to do the same job.

Cars older the the E30 could use the fuel and temp gauges, but the speedo wouldn't work as old cars use a physical rotating cable to deliver those signals, not the electric pulses/square wave that the E30 gauge is based on.
