Any ideas why the tick over could be "hunting" up and down on my car 89 325 when warm? Thanks.

Ah now there's a question. There is a sticky on this and alot of questions. a very common problem.
Check
1) for air leaks in the vacuum pipes and rubber induction boots
2) is the idle control valve moving freely and working
3) is the blue temperature sensor working properly
4) is the AFM (air flow meter) moving freely and providing correct rising resistance output.
5) check all the underbonnet connections particuarly the one below the inlet manifold ( and in line screw connector)
6) in the throttle sensor switch below the throttle body working properly

The sticky thread has how to check the above plus alot of other threads, search these and read up

once you have done the above, you are where I am.... still with a hunting problem!! now overhauling the injectors and seals.

good luck keep us posted
