Turned out to (seemingly) just be a bad solder connection.. will update if this changes.
Question still stands, I'm curious exactly what the pressureswitch does when it kicks in

Excuse me, forgot to mention that. We have recently put my thermostat in boiling water to test if maybe it would be better to use a high-duty thermostat. It opened just fine and did everything it should do.

SOLVED! Turns out the 12v plug going to the airco pump was slightly corroded, causing the fuse to constantly blow because it was drawing too much current. Cleaning it up and soldering a little bit of new wire solved the issue, I *finally* have my working airconditioning again. Sadly enough right as ...

Is it possible that it's simply my compressor that is giving too much resistance on its cycles, causing the power circuit to draw too much current and blow out the fuse?

Also maybe it's important to note that my voltmeter reads 13.6v usually while driving, but it goes down to a whopping 11.5v when the aircon is on. I purchased an infrared temperature reader to double-check, and the oil gets to roughly 90-95 degrees Celcius if I point it at the part where you can pour new oil into the block.

It's slightly lower than I'd expect ,but only by a couple of degrees, so it's fine. You can check with an infra red thermometer, or possibly measure the resistance of the blue sensor, and compare it with the published temp/resistance graphs for these sensors. That's a little lower than it should be. Was the gauge higher when driving? If it's been idling for a while, and the heater is on, then the heater may be putting out more heat than the engine's producing. Did you change the 'stat yourself? Never make the mistake of assuming that a new part is either working properly or won't fail quickly. These things follow the well known 'bath tub' reliability curve. That is interesting, I always thought temp. gauges shold be around 50%. It is indeed at the first white line, so that means it's functioning as it should.
